For adults, cancer is the thing that goes bump in the night; that bump gets louder when family or friends are diagnosed. Whether your risk is monumental or blessedly average, we know you want to protect yourself. So we've combed through research, interrogated experts, and found cutting-edge strategies to help keep you safe. Worship a wee bit of sun. People who get the most vitamin D, which lies dormant in skin until ultraviolet rays activate it, may protect themselves from a variety of cancers, including non-Hodgkin's lymphoma, breast, and colon. Ironically, it even improves survival rates of melanoma, the most serious skin cancer. But 10 to 15 minutes a few days a week is all it takes to benefit. (Or you could try a supplement—aim for 400 IU a day.) If you're out any longer than that, slather on the sunscreen. Eat an orange every day. It just may zap a strain of the H. pylori bacteria that causes peptic ulcers and can lead to stomach cancer. Researchers in San Francisco found that infected people with high levels of vitamin C in their blood were less likely to test positive for the cancer-causing strain. Listen to Katie Couric. Though colonoscopies are about as popular as root canals, if you're 50 or older, get one. Colorectal cancer is the second leading cause of cancer death in the United States. Don't think you're off the hook because you got a digital fecal occult blood test at your last checkup: Research by the Veterans Affairs Cooperative Study last year found that the test missed 95% of the cases. (Schedule your first colonoscopy before your 50th if you have a family history of colon cancer.) Steam a little green. Piles of studies have shown that piles of broccoli help stave off ovarian, stomach, lung, bladder, and colorectal cancers. And steaming it for 3 to 4 minutes enhances the power of the cancer-fighting compound sulforaphane, which has been shown to halt the growth of breast cancer cells. (Sorry, microwaving doesn't do the trick; it strips out most antioxidants.) Get more protection by sprinkling a handful of selenium-rich sunflower seeds, nuts, or mushrooms on your greens. Researchers are discovering that sulforaphane is about 13 times more potent when combined with the mineral selenium. Pick a doc with a past. Experience—lots of it—is critical when it comes to accurately reading mammograms. A study from the University of California, San Francisco, found that doctors with at least 25 years' experience were more accurate at interpreting images and less likely to give false positives. Ask about your radiologist's track record. If she is freshly minted or doesn't check a high volume of mammograms, get a second read from someone with more mileage. Drink joltless java. Downing 2 or more cups of decaf a day may lower the incidence of rectal cancer by 52%, finds a study from two large and long-term research projects—the Nurses' Health Study and the Health Professionals Follow-Up Study from Harvard University. One theory is that coffee increases bowel movements, which helps to reduce the risk. Why decaf reigns supreme, however, remains a mystery. Drop 10 pounds. Being overweight or obese accounts for 20% of all cancer deaths among women and 14% among men, notes the American Cancer Society. (You're overweight if your body mass index is between 25 and 29.9; you're obese if it's 30 or more.) Plus, losing excess pounds reduces the body's production of female hormones, which may protect against breast, endometrial, and ovarian cancers. Even if you're not technically overweight, gaining just 10 pounds after the age of 30 increases your risk of developing breast, pancreatic, and cervical, among other cancers. Make like a monkey. Or a bunny. Women who ate four to six antioxidant-laden bananas a week cut their risk of kidney cancer by 54%, compared with those who didn't eat them at all, found an analysis of 61,000 women at the Karolinska Institutet in Sweden. Gnawing on root vegetables such as carrots did the same. Get naked with a friend. You'll need help examining every inch of your body—including your back, scalp, and other hard-to-see places—for possible changes in the size or color of moles, blemishes, and freckles. These marks could spell skin cancer. Women, take special note of your legs: Melanoma mainly occurs there. For the guys, the trunk, head, and neck are the most diagnosed spots. While you're at it, check your fingernails and toenails, too. Gray-black discoloration or a distorted or elevated nail may indicate the disease. And whether you see changes or not, after age 40, everyone should see a dermatologist yearly. See into the future. After the interactive tool estimates your risk, you'll get personalized tips for prevention. Pay attention to pain. If you're experiencing a bloated belly, pelvic pain, and an urgent need to urinate, see your doc. These symptoms may signal ovarian cancer, particularly if they're severe and frequent. Women and physicians often ignore these symptoms, and that's the very reason that this disease can be deadly. When caught early, before cancer has spread outside the ovary, the relative 5-year survival rate for ovarian cancer is a jaw-dropping 90 to 95%. Get calcium daily. Milk's main claim to fame may also help protect your colon. Those who took calcium faithfully for 4 years had a 36% reduction in the development of new precancerous colon polyps 5 years after the study had ended, revealed Dartmouth Medical School researchers. (They tracked 822 people who took either 1,200 mg of calcium every day or a placebo.) Though the study was not on milk itself, you can get the same amount of calcium in three 8-ounce glasses of fat-free milk, along with an 8-ounce serving of yogurt or a 2- to 3-ounce serving of low-fat cheese daily. Sweat 30 minutes a day. One of the best anticancer potions is a half hour of motion at least 5 days a week. Any kind of physical activity modulates levels of androgens and estrogen, two things that can protect women against estrogen-driven cancers such as ovarian and endometrial, as well as some types of breast cancer. The latest proof comes by way of a recent Canadian study that found that women who get regular, moderate exercise may lower their risk of ovarian cancer by as much as 30%. Bonus: All that moving might speed everything through your colon, which may help stave off colon cancer. Stamp out smoking—all around you. Lung cancer is well known as one of the main hazards of smoking. But everything the smoke passes on its way to the lungs can also turn cancerous: mouth, larynx, and esophagus. The fun doesn't stop there. Smokers are encouraging stomach, liver, prostate, colorectal, cervical, and breast cancers as well. The good news: If you give up the cigs today, within 15 years, your lung cancer risk will drop to almost presmoking lows. Share that news with the people who puff around you, because exposure to someone else's smoke can cause lung cancer, and it may boost your chances of cervical cancer by 40%. Step away from the white bread. If you eat a lot of things with a high glycemic load—a measurement of how quickly food raises your blood sugar—you may run a higher risk of colorectal cancer than women who eat low-glycemic-load foods, finds a Harvard Medical School study involving 38,000 women. The problem eats are mostly white: white bread, pasta, potatoes, and sugary pastries. The low-glycemic-load stuff comes with fiber. Have your genes screened. Do you have a strong family history of any kind of cancer or multiple cancers? Talk with your doctor about genetic counseling. For instance, nearly everyone born with familial adenomatous polyposis (the genetic predisposition to colon cancer) develops the disease by age 40 if preventive surgery isn't done. Knowing this early can aid in prevention and early detection. Request a better breast scan. If you're at high risk of breast cancer—you have the BRCA1 or BRCA2 genetic mutation, for example—ask your doctor to pair your routine mammogram with an MRI. A recent study found that together, the two picked up 94% of tumors; mammography alone detected just 40% and MRI, 77%. Grill smarter. Cooking your food over an open flame is a great way to cut calories. Unfortunately, it can also raise your cancer risk: The grill's high temps can trigger substances in muscle proteins to form cancer-causing compounds called hetero-cyclic amines, or HCAs. But avoiding this potential hazard is easy; simply keep gas jets low or wait until the charcoal turns into glowing embers before you start cooking. Protect yourself even more by lacing your burgers with rosemary (and perhaps other antioxidant-rich herbs such as basil, oregano, or thyme). This helps reduce the amount of some HCAs in meat, a Kansas State University study found. Also helpful: Microwaving meat ahead of time helps disable HCA formation and cuts down on grilling time. Keep your house clean. Yet another reason to love your Swiffer: Active postmenopausal women who got most of their exercise from housework cut their risk of breast cancer by 30%, Canadian researchers say. Let garlic lie. Thanks to this bulbed wonder, you can ward off vampires and stave off cancer. To preserve the potential cancer-fighting power of garlic, chop it up and let it sit a bit. Research suggests that heating garlic can block 90% of the activity of alliinase, the enzyme that helps to form a cancer-fighting compound. Alliinase is activated when the cloves are crushed or cut, but if cut garlic cools its heels for 5 to 10 minutes before heating, enough compounds are formed to survive cooking. Check for radon. Exposure to this odorless, radioactive gas that's produced by the natural decay of uranium is the second leading cause of lung cancer in the United States, according to the EPA. Test your home to see if you're safe. The National Safety Council's National Radon Hotline (800-767-7236) offers low-cost test kits; they're also available at hardware stores. Play hot tomato. Red fruits (watermelon, tomato, pink grapefruit) are loaded with lycopene, a substance that has been proven time and time again to be a potent cancer fighter. It seems that heating said fruits makes the lycopene easier for the body to use, which explains why men who eat a lot of ketchup, pizza (it's in the sauce), and spaghetti (ditto) are far less likely to get prostate cancer. Ditch the wieners. You can smother 'em in all the ketchup you want, but you can't negate a hot dog's, well, negatives. A new study of 190,545 people finds that eating a wiener daily may boost your risk of pancreatic cancer, which is nearly always fatal, by 67%. Same goes for sausage and other processed meats. The Perfect Cancer- fighting Salad Quick. Can you spot the cancer fighters at the salad bar? Build yourself some powerful protection with these ingredients. Start with leafy greens. They contain a hefty amount of the B vitamin folate, which has been shown to reduce one's chances of getting colorectal, ovarian, and breast cancers. In the latest study, researchers at Vanderbilt University found that women who ate the most dark greens were among the least likely to get breast cancer. Apparently, folate can halt changes in DNA that trigger runaway cell growth, the main characteristic of cancer. Add shredded carrot. In a study from Brigham and Women?s Hospital in Boston, women who ate just five servings of four raw carrot sticks a week had a 54% decrease in their risk of getting ovarian cancer, compared with women who ate them less than once a month. Carrots may also reduce your risk of kidney cancer. Serve yourself some tomatoes. If you don't feel like turning up the heat on your tomatoes, you can still get some of their cancer-shielding benefits. German research on 165 colonoscopy patients found that those who had the lowest blood level of lycopene, one of the chemicals that give tomatoes their color, had the highest rate of colorectal adenomas, a precursor to colo-rectal cancer. Toss a few into your guy's salad: They also reduce the risk of prostate cancer. Heap on beans. Women who ate beans at least twice a week were 24% less likely to develop breast cancer than those who ate them less often, report Harvard School of Public Health researchers, who analyzed data from 90,630 people. Legumes may lessen risk of breast cancer, thanks to their ability to suppress the production of enzymes that encourage tumor growth. Add a little fish. Want to add something hardy to your lunchtime salad? Go wild with salmon. When B6-rich foods (like salmon) are eaten with folate-filled foods (dark leafy greens), they can help reduce the recurrence of colorectal adenomas, a precursor to colorectal cancer, by 39%, a University of Arizona study found. Salmon may also help shield regular eaters from skin cancer, British research found. Splash on some vinaigrette. Mixing your favorite vinegar with olive oil can also help prevent breast cancer. Scientists from Northwestern University's Feinberg School of Medicine found that oleic acid in olive oil dramatically cuts the levels of the cancer gene Her-2/neu, associated with highly aggressive breast tumors with poor prognosis. Garnish with citrus peel. They're like eating sunscreen—but they taste better. Psychologists have found that how much people smile in old photographs can predict their later success in marriage. In one test, the researchers looked at people's college yearbook photos, and rated their smile intensity from 1 to 10. None of the people who fell within the top 10 percent of smile strength had divorced, while within the bottom 10 percent of smilers, almost one in four had had a marriage that ended, the researchers say. (Scoring was based on the stretch in two muscles: one that pulls up on the mouth, and one that creates wrinkles around the eyes.) In a second trial, the research team asked people over age 65 to provide photos from their childhood (the average age in the pictures was 10 years old). The researchers scored each person's smile, and found that only 11 percent of the biggest smilers had been divorced, while 31 percent of the frowners had experienced a broken marriage. Overall, the results indicate that people who frown in photos are five times more likely to get a divorce than people who smile. While the connection is striking, the researchers stress that they can't conclude anything about the cause of the correlation. "Maybe smiling represents a positive disposition towards life," said study leader Matthew Hertenstein, a psychologist at DePauw University in Indiana. "Or maybe smiling people attract other happier people, and the combination may lead to a greater likelihood of a long-lasting marriage. We don't really know for sure what's causing it." Hertenstein said he has considered other explanations, such as the possibility that people who smile more often tend to attract more friends, and a larger support network makes it easier to keep a marriage healthy. Or it could be that people who smile when a photographer tells them to are more likely to have obedient personalities, which could make marriage easier. The results of the study fit into a larger pattern of research that has found many personality characteristics can be determined from very thin slices of behavior. Basically, we often reveal ourselves in the most subtle, simple ways. And smiling in photographs has been shown to be correlated with a number of traits, including a generally happier disposition. "I think [our results] go along with a lot of the literature that's been coming out over the last five to 10 years, which shows that positive emotionality is incredibly important in our lives," Hertenstein told LiveScience. "There are many, many beneficial outcomes to a positive disposition." The findings are also notable because they found a connection between photos taken when people were young and marriage outcomes that sometimes occurred much later. "It feeds into this idea that what's occurring earlier in our lives in terms of our present situation and our mental state can predict things that occur decades later," Hertenstein said. The book is the former referee's account of his time in the NBA and the events that led to his conviction, in 2007, on charges that he relayed inside information on NBA games — including several that he was working — to a professional gambler. Blowing the Whistle falls somewhere between a confessional and an indictment, both of his former colleagues and their employer. In the book, Donaghy alleges, among other things, that referee Dick Bavetta spoke unabashedly about his role as the NBA's "go-to guy." Donaghy cites Game 6 of the notorious 2002 Western Conference finals, between the Lakers and the Kings — a game that NBA conspiracy theorists still talk about as if it were basketball's grassy knoll. Donaghy, who was not assigned to the game, reports that Bavetta "openly talked about the fact that the league wanted a Game 7." We'll have excerpts later today. Donaghy is currently in a federal detention center near Tampa, a week away from his release. About 10 months ago, he shopped the book to Triumph Books, an imprint of Random House, according to a source close to Donaghy. Triumph, the source says, "put forth a huge effort to verify every statement in that book." (Triumph's editorial director, Tom Bast, declined to comment.) Two weeks ago, Blowing the Whistle was ready for printing; 60 Minutes had plans to interview Donaghy in conjunction with the book's publication. Then the NBA came calling. "They came after Random House and threatened a lawsuit," the source says, "and Random House just rolled and decided to not go with it. It's really that simple." To his knowledge, no one at the NBA had actually read the book. "Which is why," he goes on, "Triumph was so intrigued as to why the parent company decided to not go with it. Because there was no logical reasoning other than an open threat. It just doesn't make sense. If they had come down and said, 'There are some specific things that are flat-out lies or they're wrong and we think there are fabrications or something,' then there'd be some basis to say, 'OK, we need to back up and double-check this.' But this was just an open comment. And so we don't know what the specific basis of that potential suit might've been." The book no longer has an Amazon page; it's cached here. Meanwhile, Donaghy is looking for another publisher. He may even self-publish. "It's dead right now," the source says. "The whole thing has fallen flat on its face. ... On gambling refs: To have a little fun at the expense of the worst troublemakers, the referees working the game would sometimes make a modest friendly wager amongst themselves: first ref to give one of the bad boys a technical foul wouldn't have to tip the ball boy that night. In the NBA, ball boys set up the referees' locker room and keep it stocked with food and beer for the postgame meal. We usually ran the kid ragged with a variety of personal requests and then slipped him a $20 bill. Technically, the winner of the bet won twice — he didn't have to pay the kid and he got to call a T on Mr. Foul-Mouthed Big-Shot Du Jour. After the opening tip, it was hilarious as the three of us immediately focused our full attention on the intended victim, waiting for something, anything, to justify a technical foul. If the guy so much as looked at one of us and mumbled, we rang him up. Later in the referees' locker room, we would down a couple of brews, eat some chicken wings, and laugh like hell. We had another variation of this gag simply referred to as the "first foul of the game" bet. While still in the locker room before tip-off, we would make a wager on which of us would call the game's first foul. That referee would either have to pay the ball boy or pick up the dinner tab for the other two referees. Sometimes, the ante would be $50 a guy. Like the technical foul bet, it was hilarious — only this time we were testing each other's nerves to see who had the guts to hold out the longest before calling a personal foul. There were occasions when we would hold back for two or three minutes — an eternity in an NBA game — before blowing the whistle. It didn't matter if bodies were flying all over the place; no fouls were called because no one wanted to lose the bet. We played this little game during the regular season and summer league. After a game, all three refs would gather around the VCR and watch a replay of the game. Early in the contest, the announcers would say, "Holy cow! They're really letting them play tonight!" If they only knew... During one particular summer game, Duke Callahan, Mark Wunderlich, and I made it to the three-minute mark in the first quarter without calling a foul. We were running up and down the court, laughing our asses off as the players got hammered with no whistles. The players were exhausted from the nonstop running when Callahan finally called the first foul because Mikki Moore of the New Jersey Nets literally tackled an opposing player right in front of him. Too bad for Callahan — he lost the bet. I became so good at this game that if an obvious foul was committed right in front of me, I would call a travel or a three-second violation instead. Those violations are not personal fouls, so I was still in the running to win the bet. The players would look at me with disbelief on their faces as if to say, "What the hell was that?" On star treatment: Relationships between NBA players and referees were generally all over the board — love, hate, and everything in-between. Some players, even very good ones, were targeted by referees and the league because they were too talented for their own good. Raja Bell, formerly of the Phoenix Suns and now a member of the Charlotte Bobcats, was one of those players. A defensive specialist throughout his career, Bell had a reputation for being a "star stopper." His defensive skills were so razor sharp that he could shut down a superstar, or at least make him work for his points. Kobe Bryant was often frustrated by Bell's tenacity on defense. Let's face it, no one completely shuts down a player of Kobe's caliber, but Bell could frustrate Kobe, take him out of his game, and interrupt his rhythm. You would think that the NBA would love a guy who plays such great defense. Think again! Star stoppers hurt the promotion of marquee players. Fans don't pay high prices to see players like Raja Bell — they pay to see superstars like Kobe Bryant score 40 points. Basketball purists like to see good defense, but the NBA wants the big names to score big points. If a player of Kobe's stature collides with the likes of Raja Bell, the call will almost always go for Kobe and against Bell. As part of our ongoing training and game preparation, NBA referees regularly receive game-action video tape from the league office. Over the years, I have reviewed many recorded hours of video involving Raja Bell. The footage I analyzed usually illustrated fouls being called against Bell, rarely for him. The message was subtle but clear — call fouls against the star stopper because he's hurting the game. If Kobe Bryant had two fouls in the first or second quarter and went to the bench, one referee would tell the other two, "Kobe's got two fouls. Let's make sure that if we call a foul on him, it's an obvious foul, because otherwise he's gonna go back to the bench. If he is involved in a play where a foul is called, give the foul to another player." Similarly, when games got physically rough, we would huddle up and agree to tighten the game up. So we started calling fouls on guys who didn't really matter — "ticky-tack" or "touch" fouls where one player just touched another but didn't really impede his progress. Under regular circumstances these wouldn't be fouls, but after a skirmish we wanted to regain control. We would never call these types of fouls on superstars, just on the average players who didn't have star status. It was important to keep the stars on the floor. Allen Iverson provides a good example of a player who generated strong reaction, both positive and negative, within the corps of NBA referees. For instance, veteran referee Steve Javie hated Allen Iverson and was loathe [sic] to give him a favorable call. If Javie was on the court when Iverson was playing, I would always bet on the other team to win or at least cover the spread. No matter how many times Iverson hit the floor, he rarely saw the foul line. By contrast, referee Joe Crawford had a grandson who idolized Iverson. I once saw Crawford bring the boy out of the stands and onto the floor during warm-ups to meet the superstar. Iverson and Crawford's grandson were standing there, shaking hands, smiling, talking about all kinds of things. If Joe Crawford was on the court, I was pretty sure Iverson's team would win or at least cover the spread. Madison Square Garden was the place to be for a marquee matchup between the Miami Heat and New York Knicks. I worked the game with Derrick Stafford and Gary Zielinski, knowing that the Knicks were a sure bet to get favorable treatment that night. Derrick Stafford had a close relationship with Knicks coach Isiah Thomas, and he despised Heat coach Pat Riley. I picked the Knicks without batting an eye and settled in for a roller-coaster ride on the court. During pregame warm-ups, Shaquille O'Neal approached Stafford and asked him to let some air out of the ball. "Is this the game ball?" O'Neal asked. "It's too hard. C'mon, D, let a little air out of it." Stafford then summoned one of the ball boys, asked for an air needle, and let some air out of the ball, getting a big wink and a smile from O'Neal. On makeup calls: I remember one nightmarish game I worked with Joe Crawford and Phil Robinson. Minnesota and New Orleans were in a tight game going into the last minute, and Crawford told us to make sure that we were 100 percent sure of the call every time we blew the whistle. When play resumed, Minnesota coach Flip Saunders started yelling at us to make a call. Robinson got intimidated and blew the whistle on New Orleans. The only problem was it wasn't the right call. Tim Floyd, the Hornets' coach, went nuts. He stormed the court and kicked the ball into the top row of the stadium. Robinson had to throw him out, and Minnesota won the game. [...] Later that week, Ronnie Nunn told me that we could have made something up at the other end against Minnesota to even things out. He even got specific — maybe we should have considered calling a traveling violation on Kevin Garnett. Talk about the politics of the game! Of course the official statement from the league office will always read, "There is no such thing as a makeup call." On his fellow referees: Dick Bavetta Crawford wanted the game over quickly so he could kick back, relax, and have a beer; [Dick Bavetta] wanted it to keep going so he could hear his name on TV. He actually paid an American Airlines employee to watch all the games he worked and write down everything the TV commentators said about him. No matter how late the game was over, he'd wake her up for a full report. He loved the attention. That very first time Jack and I bet on an NBA game, Dick was on the court. The team we picked lost the game, but it covered the large point spread and that's how we won the money. Because of the matchup that night, I had some notion of who might win the game, but that's not why I was confident enough to pull the trigger and pick the other team. The real reason I picked the losing team was that I was just about certain they would cover the spread, no matter how badly they played. That is where Dick Bavetta comes into the picture. From my earliest involvement with Bavetta, I learned that he likes to keep games close, and that when a team gets down by double-digit points, he helps the players save face. He accomplishes this act of mercy by quietly, and frequently, blowing the whistle on the team that's having the better night. Team fouls suddenly become one-sided between the contestants, and the score begins to tighten up. That's the way Dick Bavetta referees a game — and everyone in the league knew it. Fellow referee Danny Crawford attended Michael Jordan's Flight School Camp years ago and later told me that he had long conversations with other referees and NBA players about how Bavetta propped up weak teams. Danny told me that Jordan himself said that everyone in the league knew that Bavetta cheated in games and that the players and coaches just hoped he would be cheating for them on game night. Cheating? That's a very strong word to use in any sentence that includes the name Dick Bavetta. Is the conscious act of helping a team crawl back into a contest "cheating"? The credo of referees from high school to the NBA is "call them like you see them." Of course, that's a lot different than purposely calling more fouls against one team as opposed to another. Did Bavetta have a hidden agenda? Or was he the ultimate company man, making sure the NBA and its fans got a competitive game most times he was on the court? Studying under Dick Bavetta for 13 years was like pursuing a graduate degree in advanced game manipulation. He knew how to marshal the tempo and tone of a game better than any referee in the league, by far. He also knew how to take subtle — and not so subtle — cues from the NBA front office and extend a playoff series or, worse yet, change the complexion of that series. The 2002 Western Conference Finals between the Los Angeles Lakers and the Sacramento Kings presents a stunning example of game and series manipulation at its ugliest. As the teams prepared for Game 6 at the Staples Center, Sacramento had a 3–2 lead in the series. The referees assigned to work Game 6 were Dick Bavetta, Bob Delaney, and Ted Bernhardt. As soon as the referees for the game were chosen, the rest of us knew immediately that there would be a Game 7. A prolonged series was good for the league, good for the networks, and good for the game. Oh, and one more thing: it was great for the big-market, star-studded Los Angeles Lakers. In the pregame meeting prior to Game 6, the league office sent down word that certain calls — calls that would have benefitted the Lakers — were being missed by the referees. This was the type of not-so-subtle information that I and other referees were left to interpret. After receiving the dispatch, Bavetta openly talked about the fact that the league wanted a Game 7. "If we give the benefit of the calls to the team that's down in the series, nobody's going to complain. The series will be even at three apiece, and then the better team can win Game 7," Bavetta stated. As history shows, Sacramento lost Game 6 in a wild come-from-behind thriller that saw the Lakers repeatedly sent to the foul line by the referees. For other NBA referees watching the game on television, it was a shameful performance by Bavetta's crew, one of the most poorly officiated games of all time. The 2002 series certainly wasn't the first or last time Bavetta weighed in on an important game. He also worked Game 7 of the 2000 Western Conference Finals between the Lakers and the Trail Blazers. The Lakers were down by 13 at the start of the fourth quarter when Bavetta went to work. The Lakers outscored Portland 31–13 in the fourth quarter and went on to win the game and the series. It certainly didn't hurt the Lakers that they got to shoot 37 free throws compared to a paltry 16 for the Trail Blazers. Two weeks before the 2003–04 season ended, Bavetta and I were assigned to officiate a game in Oakland. That afternoon before the tip-off, we were discussing an upcoming game on our schedule. It was the last regular-season game we were scheduled to work, pitting Denver against San Antonio. Denver had lost a game a few weeks prior because of a mistake made by the referees, a loss that could be the difference between them making or missing the playoffs. Bavetta told me Denver needed the win and that it would look bad for the staff and the league if the Nuggets missed the playoffs by one game. There were still a few games left on the schedule before the end of the season, and the standings could potentially change. But on that day in Oakland, Bavetta looked at me and casually stated, "Denver will win if they need the game. That's why I'm on it." I was thinking, How is Denver going to win on the road in San Antonio? At the time, the Spurs were arguably the best team in the league. Bavetta answered my question before it was asked. "Duncan will be on the bench with three fouls within the first five minutes of the game," he calmly stated. Bavetta went on to inform me that it wasn't the first time the NBA assigned him to a game for a specific purpose. He cited examples, including the 1993 playoff series when he put New Jersey guard Drazen Petrovic on the bench with quick fouls to help Cleveland beat the Nets. He also spoke openly about the 2002 Los Angeles–Sacramento series and called himself the NBA's "go-to guy." As it turned out, Denver didn't need the win after all; they locked up a spot in the playoffs before they got to San Antonio. In a twist of fate, it was the Spurs that ended up needing the win to have a shot at the division title, and Bavetta generously accommodated. In our pregame meeting, he talked about how important the game was to San Antonio and how meaningless it was to Denver, and that San Antonio was going to get the benefit of the calls that night. Armed with this inside information, I called Jack Concannon before the game and told him to bet the Spurs. To no surprise, we won big. San Antonio blew Denver out of the building that evening, winning by 26 points. When Jack called me the following morning, he expressed amazement at the way an NBA game could be manipulated. Sobering, yes; amazing, no. That's how the game is played in the National Basketball Association. In a follow-up email to the referee staff and the league office, Crawford railed about the lack of respect players had for referees and the NBA's failure to back him up. Then, in a direct shot at the league's embracing of referees like Dick Bavetta, he fired a sharp rebuke: "I also told [Stu Jackson] that the staff is an officiating staff of Dick Bavetta's — schmoozing and sucking people's asses to get ahead. Awful, but it is reality." Crawford also touched on the fact that he was being excluded from working the playoffs that year: "Look on the bright side everybody, MORE playoff games for you guys and Dick, maybe you will get to be crew chief in the 7th game of the Finals, which is a travesty in itself you even being in the Finals." Tommy Nunez My favorite Tommy Nunez story is from the 2007 playoffs when the San Antonio Spurs were able to get past the Phoenix Suns in the second round. Of course, what many fans didn't know was that Phoenix had someone working against them behind the scenes. Nunez was the group supervisor for that playoff series, and he definitely had a rooting interest. Nunez loved the Hispanic community in San Antonio and had a lot of friends there. He had been a referee for 30 years and loved being on the road; in fact, he said that the whole reason he had become a group supervisor was to keep getting out of the house. So Nunez wanted to come back to San Antonio for the conference finals. Plus, he, like many other referees, disliked Suns owner Robert Sarver for the way he treated officials. Both of these things came into play when he prepared the referees for the games in the staff meetings. I remember laughing with him and saying, "You would love to keep coming back here." He was pointing out everything that Phoenix was able to get away with and never once told us to look for anything in regard to San Antonio. Nunez should have a championship ring on his finger. Derrick Stafford and Jess Kersey Of course, Stafford had some friends in the league, too. I worked a Knicks game in Madison Square Garden with him on February 26, 2007. New York shot an astounding 39 free throws that night to Miami's paltry eight. It seemed like Stafford was working for the Knicks, calling fouls on Miami like crazy. Isiah Thomas was coaching the Knicks, and after New York's four-point victory, a guy from the Knicks came to our locker room looking for Stafford, who was in the shower. He told us that Thomas sent him to retrieve Stafford's home address; apparently, Stafford had asked the coach before the game for some autographed sneakers and jerseys for his kids. Suddenly, it all made sense. Referee Jess Kersey was another one of Isiah Thomas' guys. They'd talk openly on the phone as if they had known each other since childhood. Thomas even told Kersey that he was pushing to get Ronnie Nunn removed from the supervisor's job so that Kersey and Dick Bavetta could take over. This sort of thing happened all the time, and I kept waiting for a Knicks game when Stafford, Bavetta, and Kersey were working together. It was like knowing the winning lottery numbers before the drawing! Steve Javie And then there was the ongoing feud between Javie and 76ers superstar Allen Iverson. The rift was so bad that Philadelphia general manager Billy King often called the league office to complain about Javie's treatment of Iverson during a game. Iverson was eventually traded to Denver, and in his first game against his former team, he was tossed after two technicals. Afterward, Iverson implied Javie had a grudge against him, saying, "I thought I got fouled on that play, and I said I thought that he was calling the game personal, and he threw me out. His fuse is real short anyway, and I should have known that I couldn't say anything anyway. It's been something personal with me and him since I got in the league. This was just the perfect game for him to try and make me look bad." The league fined Iverson $25,000 for his comments, but most of the league referees thought the punishment was too lenient and were upset he wasn't suspended. As a result, we collectively decided to dispense a little justice of our own, sticking it to Iverson whenever we could. Shortly after the Javie-Iverson incident, I worked a Jazz-Nuggets contest in Denver on January 6, 2007. During the pregame meeting, my fellow referees Bernie Fryer and Gary Zielinski agreed that we were going to strictly enforce the palming rule against Iverson. Palming the ball was something Iverson loved to do, but if he so much as came close to a palm, we were going to blow the whistle. Obviously, our actions were in direct retaliation for Iverson's rant against Javie. True to form, I immediately excused myself and made an important phone call. Sticking to our pregame pledge, each of us whistled Iverson for palming in the first quarter — we all wanted in on the fun. The violations seemed to affect Iverson's rhythm and he played terribly that night, shooting 5-for-19 with five turnovers. After getting repeatedly whistled all night long, Iverson approached me in an act of submission. "How long am I going to be punished for Javie?" he quietly inquired. "Don't know what you're talking about, Allen," I responded. Soda, pop, cola, soft drink — whatever you call it, it is one of the worst beverages that you could be drinking for your health. As the debate for whether to put a tax on the sale of soft drinks continues, you should know how they affect your body so that you can make an informed choice on your own. Soft drinks are hard on your health Soft drinks contain little to no vitamins or other essential nutrients. However, it is what they do contain that is the problem: caffeine, carbonation, simple sugars — or worse, sugar substitutes — and often food additives such as artificial coloring, flavoring, and preservatives. A lot of research has found that consumption of soft drinks in high quantity, especially by children, is responsible for many health problems that include tooth decay, nutritional depletion, obesity, type-2 diabetes, and heart disease. Why the sugar in soft drinks isn’t so sweet Most soft drinks contain a high amount of simple sugars. The USDA recommendation of sugar consumption for a 2,000-calorie diet is a daily allotment of 10 teaspoons of added sugars. Many soft drinks contain more than this amount! Just why is too much sugar so unhealthy? Well, to start, let's talk about what happens to you as sugar enters your body. When you drink sodas that are packed with simple sugars, the pancreas is called upon to produce and release insulin, a hormone that empties the sugar in your blood stream into all the tissues and cells for usage. The result of overindulging in simple sugar is raised insulin levels. Raised blood insulin levels beyond the norm can lead to depression of the immune system, which in turn weakens your ability to fight disease. Something else to consider is that most of the excess sugar ends up being stored as fat in your body, which results in weight gain and elevates risk for heart disease and cancer. One study found that when subjects were given refined sugar, their white blood cell count decreased significantly for several hours afterwards. Another study discovered that rats fed a high-sugar diet had a substantially elevated rate of breast cancer when compared to rats on a regular diet. The health effects of diet soda You may come to the conclusion that diet or sugar-free soda is a better choice. However, one study discovered that drinking one or more soft drinks a day — and it didn’t matter whether it was diet or regular — led to a 30% greater chance of weight gain around the belly. Diet soda is filled with artificial sweeteners such as aspartame, sucralose, or saccharin. These artificial sweeteners pose a threat to your health. Saccharin, for instance, has been found to be carcinogenic, and studies have found that it produced bladder cancer in rats. Aspartame, commonly known as nutrasweet, is a chemical that stimulates the brain to think the food is sweet. It breaks down into acpartic acid, phenylalanine, and methanol at a temperature of 86 degrees. (Remember, your stomach is somewhere around 98 degrees.) An article put out by the University of Texas found that aspartame has been linked to obesity. The process of stimulating the brain causes more cravings for sweets and leads to carbohydrate loading. Carbonation depletes calcium Beverages with bubbles contain phosphoric acid, which can severely deplete the blood calcium levels; calcium is a key component of the bone matrix. With less concentration of calcium over a long time, it can lower deposition rates so that bone mass and density suffer. This means that drinking sodas and carbonated water increases your risk of osteoporosis. Add in the caffeine usually present in soft drinks, and you are in for even more trouble. Caffeine can deplete the body’s calcium, in addition to stimulating your central nervous system and contributing to stress, a racing mind, and insomnia. Skip the soda and go for: • Fresh water Water is a vital beverage for good health. Each and every cell needs water to perform its essential functions. Since studies show that tap water is filled with contaminants, antibiotics, and a number of other unhealthy substances, consider investing in a quality carbon-based filter for your tap water. But when Prevention talked to the people at the forefront of food safety and asked them one simple question—“What foods do you avoid?”—we got some pretty interesting answers. Although these foods don’t necessarily make up a "banned” list, as you head into the holidays—and all the grocery shopping that comes with it—their answers are, well, food for thought: 20 ways to feed your family for $100 a week. 1. Canned Tomatoes The expert: Fredrick vom Saal, PhD, an endocrinologist at the University of Missouri who studies bisphenol-A The problem: The resin linings of tin cans contain bisphenol-A, a synthetic estrogen that has been linked to ailments ranging from reproductive problems to heart disease, diabetes, and obesity. Unfortunately, acidity (a prominent characteristic of tomatoes) causes BPA to leach into your food. Studies show that the BPA in most people's body exceeds the amount that suppresses sperm production or causes chromosomal damage to the eggs of animals. "You can get 50 mcg of BPA per liter out of a tomato can, and that's a level that is going to impact people, particularly the young," says vom Saal. "I won't go near canned tomatoes." The solution: Choose tomatoes in glass bottles (which do not need resin linings), such as the brands Bionaturae and Coluccio. You can also get several types in Tetra Pak boxes, like Trader Joe's and Pomi. 14 worst health mistakes even smart women make. 2. Corn-Fed Beef The expert: Joel Salatin, co-owner of Polyface Farms and author of half a dozen books on sustainable farming The problem: Cattle evolved to eat grass, not grains. But farmers today feed their animals corn and soybeans, which fatten up the animals faster for slaughter. More money for cattle farmers (and lower prices at the grocery store) means a lot less nutrition for us. A recent comprehensive study conducted by the USDA and researchers from Clemson University found that compared with corn-fed beef, grass-fed beef is higher in beta-carotene, vitamin E, omega-3s, conjugated linoleic acid (CLA), calcium, magnesium, and potassium; lower in inflammatory omega-6s; and lower in saturated fats that have been linked to heart disease. "We need to respect the fact that cows are herbivores, and that does not mean feeding them corn and chicken manure," says Salatin. The solution: Buy grass-fed beef, which can be found at specialty grocers, farmers' markets, and nationally at Whole Foods. It's usually labeled because it demands a premium, but if you don't see it, ask your butcher. 25 ridiculously healthy foods you should be eating now. 3. Microwave Popcorn The expert: Olga Naidenko, PhD, a senior scientist for the Environmental Working Group, The problem: Chemicals, including perfluorooctanoic acid (PFOA), in the lining of the bag, are part of a class of compounds that may be linked to infertility in humans, according to a recent study from UCLA. In animal testing, the chemicals cause liver, testicular, and pancreatic cancer. Studies show that microwaving causes the chemicals to vaporize—and migrate into your popcorn. "They stay in your body for years and accumulate there," says Naidenko, which is why researchers worry that levels in humans could approach the amounts causing cancers in laboratory animals. DuPont and other manufacturers have promised to phase out PFOA by 2015 under a voluntary EPA plan, but millions of bags of popcorn will be sold between now and then. The solution: Pop natural kernels the old-fashioned way: in a skillet. For flavorings, you can add real butter or dried seasonings, such as dillweed, vegetable flakes, or soup mix. Nonorganic Potatoes The expert: Jeffrey Moyer, chair of the National Organic Standards Board The problem: Root vegetables absorb herbicides, pesticides, and fungicides that wind up in soil. In the case of potatoes—the nation's most popular vegetable—they're treated with fungicides during the growing season, then sprayed with herbicides to kill off the fibrous vines before harvesting. After they're dug up, the potatoes are treated yet again to prevent them from sprouting. "Try this experiment: Buy a conventional potato in a store, and try to get it to sprout. It won't," says Moyer, who is also farm director of the Rodale Institute (also owned by Rodale Inc., the publisher of Prevention). "I've talked with potato growers who say point-blank they would never eat the potatoes they sell. They have separate plots where they grow potatoes for themselves without all the chemicals." The solution: Buy organic potatoes. Washing isn't good enough if you're trying to remove chemicals that have been absorbed into the flesh. 14 ways to make veggies less boring. 5. Farmed Salmon The expert: David Carpenter, MD, director of the Institute for Health and the Environment at the University at Albany and publisher of a major study in the journal Science on contamination in fish. The problem: Nature didn't intend for salmon to be crammed into pens and fed soy, poultry litter, and hydrolyzed chicken feathers. As a result, farmed salmon is lower in vitamin D and higher in contaminants, including carcinogens, PCBs, brominated flame retardants, and pesticides such as dioxin and DDT. According to Carpenter, the most contaminated fish come from Northern Europe, which can be found on American menus. "You could eat one of these salmon dinners every 5 months without increasing your risk of cancer," says Carpenter, whose 2004 fish contamination study got broad media attention. "It's that bad." Preliminary science has also linked DDT to diabetes and obesity, but some nutritionists believe the benefits of omega-3s outweigh the risks. There is also concern about the high level of antibiotics and pesticides used to treat these fish. When you eat farmed salmon, you get dosed with the same drugs and chemicals. The solution: Switch to wild-caught Alaska salmon. If the package says fresh Atlantic, it's farmed. There are no commercial fisheries left for wild Atlantic salmon. Delicious and easy fish recipes 6. Milk Produced with Artificial Hormones The expert: Rick North, project director of the Campaign for Safe Food at the Oregon Physicians for Social Responsibility and former CEO of the Oregon division of the American Cancer Society The problem: Milk producers treat their dairy cattle with recombinant bovine growth hormone (rBGH or rBST, as it is also known) to boost milk production. But rBGH also increases udder infections and even pus in the milk. It also leads to higher levels of a hormone called insulin-like growth factor in milk. In people, high levels of IGF-1 may contribute to breast, prostate, and colon cancers. "When the government approved rBGH, it was thought that IGF-1 from milk would be broken down in the human digestive tract," says North. As it turns out, the casein in milk protects most of it, according to several independent studies. "There's not 100% proof that this is increasing cancer in humans," admits North. "However, it's banned in most industrialized countries." The solution: Check labels for rBGH-free, rBST-free, produced without artificial hormones, or organic milk. These phrases indicate rBGH-free products. Don’t be fooled by these 11 health food imposters. 7. Conventional Apples The expert: Mark Kastel, former executive for agribusiness and codirector of the Cornucopia Institute, a farm-policy research group that supports organic foods The problem: If fall fruits held a "most doused in pesticides contest," apples would win. Why? They are individually grafted (descended from a single tree) so that each variety maintains its distinctive flavor. As such, apples don't develop resistance to pests and are sprayed frequently. The industry maintains that these residues are not harmful. But Kastel counters that it's just common sense to minimize exposure by avoiding the most doused produce, like apples. "Farm workers have higher rates of many cancers," he says. And increasing numbers of studies are starting to link a higher body burden of pesticides (from all sources) with Parkinson's disease. Whether out of financial necessity or the desire to streamline product lines, here are five auto brands that have faded away. 1. Mercury Mercury is a brand of the Ford Motor Company that has been around for over 70 years. Ford recently decided in early June to end Mercury production before the end of the year. Mercury was originally created to offer Ford customers a premium vehicle. Hummer, with roots that go back to the 1992 military Humvees, faced challenges in recent years as consumers became more conscious about vehicle gas mileage. Hummers are notorious gas guzzlers and took criticism from environmental groups pressing for more fuel efficient vehicles. Hummer is one of several recent General Motors brands to be discontinued 3. Pontiac Anyone who paid attention on the road in the 1960s and 1970s took notice of muscle cars - those sleek, high performance vehicles with V8 engines that could be heard from a mile away. A brand of General Motors, Pontiac made vehicles and muscle cars that defined an era with legendary models such as the GTO and Trans Am. Though Pontiac was at one time one of the top selling brands in the United States, its leadership was unable to devise a strategy that would allow the Pontiac brand to continue. In business since 1926, Pontiac was discontinued in April, 2009. 4. Saturn General Motors halted production of its Saturn brand in October, 2009 after a deal to sell to Penske Automotive Group failed. Saturn, with a vehicle line that included mostly small to mid-size cars, had been around since 1985. General Motors has enjoyed successful brands over the years, but Saturn struggled and was never profitable. General Motors filed for Chapter 11 bankruptcy in mid-2009, and was the recipient of U.S. government TARP loans (bailout) following the economic meltdown of 2008. Under scrutiny to pay back loans and become a sustainable corporation, GM has been forced to streamline its brands and focus on the lines that have the most potential. 5. Oldsmobile Another General Motors brand, Oldsmobile was founded as the Olds Motor Vehicle Company in 1897. Claiming to be the first company to mass-produce vehicles, Oldsmobile joined GM in 1908. Oldsmobile was the first brand to come with fully automatic transmissions, debuted in the 1940 Hydra-Matic models. Competitive with both Chevrolet and Ford, Oldsmobile's Cutlass series became the best-selling car in the United States in 1976. GM pulled the plug in 2004, citing that "Oldsmobile production has remained unprofitable" and that it would therefore end manufacturing. The Bottom Line Since the invention of the automobile, brands have come and gone. Many have faded away, but a few remain strong in the hearts of collectors and enthusiasts, making occasional appearances at auto shows, or in magazines and online venues. The auto industry, which produced more than 60 million vehicles in 2009, is the most significant economic sector in terms of revenues. The Transition Roadable Aircraft, developed by Massachusetts-based engineering firm Terrafugia, will be allowed a maximum takeoff weight of 1,430 pounds, the same allowance made for aircraft designed to operate on water. Other planes in the class, called Light Sport Aircraft, are limited to a maximum takeoff weight of 1,320 pounds. "The main reason for that additional weight is the additional safety features that the Transition has -- because it's designed to be operated on the road -- that aren't found in other light aircraft," said Anna Dietrich, Terrafugia's chief operating officer. A protective safety cage, airbags and an energy absorbing crumple zone are among the extra features. Light sport aircraft are limited to carrying two people -- a pilot and a passenger. The pilot must have a Sport Pilot certificate, which requires 20 hours of flight training. "It's a certification more appropriate to the size and complexity of these simple aircraft," Dietrich said. "There's actually programs that you can do in about two weeks. You can take a couple weeks off of work and come home a pilot, so it's a very accessible, very exciting way of getting into aviation and giving yourself that additional freedom and flexibility," Dietrich said. Going from plane to car "takes about the same amount of time as putting down your convertible top," and the transition takes place from inside the cockpit. After landing, a cockpit-operated system folds up the wings, and the pilot can drive away. Transition is designed for trips of up to about 450 miles and can travel about 100 miles per hour in the air and "highway speeds" on the ground of "65, 70, [miles per hour] -- something like that," Dietrich said. "We're really not pushing the performance as an automobile because it is really designed to be used as an airplane that has this additional capability," she said. "Functionally, it's a lot closer to an airplane than it would be to your car." The price is more in line with aircraft as well; Terrafugia anticipates the Transition will cost $194,000. The first delivery will occur in about 18 months, Dietrich said. The Transition still has to receive FAA certification and National Highway Traffic Safety Administration testing before it goes into production. If you’ve ever wished you could do some simple things to sharpen your memory skills, you can. We’ve talked to the experts and compiled the latest thinking on improving the muscles in your brain associated with memory. 1. Talk with your hands. It may sound strange, but waving your hands and gesturing while trying to learn a concept may help your brain remember something important, says Jeff Brown, PsyD, ABPP, coauthor of The Winner’s Brain. "Gesturing in a meaningful way while you are learning may help you when recalling the concept,” he says. “The idea is that you are storing at least two different types of information about something you'll need to recall later. A good example of this is when kids speak math problems aloud, but also 'work them' in the air.” Tactics to try: When you’ve just learned someone’s name, “write” it down on the palm of your hand with your finger. The act of tracing the letters on your palm (discreetly, of course) can help your brain remember it, says Dr. Brown. Or, “Air-write on an imaginary map of your grocery store or mall as you name aloud the items or stores you need to remember when shopping.” 2. Take a chill pill. Learning to calm down and not carry as much stress can help your brain in significant ways, says Elizabeth Lombardo, PhD, PT, a psychologist and physical therapist in Wexford, Pennsylvania, and the author of A Happy You: Your Ultimate Prescription for Happiness. “The best tip to improve your memory is: Reduce your stress,” says Dr. Lombardo. “Research shows that when people experience chronic stress, their hippocampus—the part of your brain that is responsible for some memories—literally shrinks in size.” In fact, a 2007 study in the journal Neurology by researchers at Rush University Medical School found that people who are easily distressed and had more negative emotions were more likely to develop memory problems than more easygoing people. How to reduce your stress? Consider delegating more tasks at work, clearing your social calendar for the weekend (there’s nothing wrong with having nothing on the calendar!) and purging negative relationships from your life. 3. Get plenty of zzz’s. You’ve heard the concept of “sleeping on it” when you’re faced with a problem or difficult decision, right? Well, getting a good night’s sleep can help you improve your memory, too. "Sleep is critical for memory consolidation,” says Dr. Brown. “Getting at least six hours of uninterrupted sleep following exposure to new information can help in the recall of that information.” But there’s an important side note: “The trick is going directly to bed without inserting any new information or activity between what you want to recall and going to sleep—no reading, no TV, no sex, no music." 4. Eat more fruits and veggies. Eating your spinach—and carrots and peas—is not only good for your body, it’s good for your memory, too. A recent Harvard study found that people who ate more vegetables had a slower decline of brain function as they aged. “Other studies, such as one published in Pharmacology, have shown that essential brain-boosting nutrients found in certain produce, such as quercetin and anthocyanin, may reverse memory loss,” says Tosca Reno, a health and fitness expert and author of the bestselling book The Eat-Clean Diet. You can find these compounds in cruciferous vegetables, such as Brussels sprouts, broccoli and cabbage, as well as in leafy greens, including kale, spinach and Swiss chard. Also load up on brightly colored produce such as berries, red apples, eggplant and grapes—their bright hue is an indication of their brain-boosting antioxidants. 5. Join a book club. Not only is reading great for your brain, but discussing what you’ve read can improve your memory by leaps and bounds, says Sandra Bond Chapman, PhD. In fact, a book club with your closest girlfriends may help strengthen your brain’s frontal lobe function. “The frontal lobe is the last region of the brain to develop, but the first to decline with age,” explains Dr. Chapman. “To strengthen function of the frontal lobe, engage in deeper-level thinking activities such as interpreting what you read in a book, discussing the ‘larger messages’ in the book and pushing to see how many meanings you can derive from it.” 6. Go to yoga class. What can a downward-facing-dog pose do for your memory? A lot, says Gina Norman, a yoga teacher in New York City. “A new study out of the University of North Carolina shows that brief meditative exercise helps cognition and skills essential to critical thinking,” she says. But if you’re not into yoga, exercise of any kind works to boost your brain, says Dr. Lombardo. “Research shows that exercise increases the blood flow to all areas of your body, including the brain and specifically areas involved in memory,” she says. “One study found that mice who exercised grew new brain cells in the dentate gyrus, a part of the hippocampus which can be affected by declines in memory as we get older.” Short on time? “Try running up a flight of stairs, jogging to a bathroom that is farther away from you, doing 50 jumping jacks, putting on a great song and dancing around, or grabbing your child’s hand and jumping on the bed together.” 7. Sniff some rosemary. Parsley and sage are great, as is thyme, but when it comes to improving memory, rosemary is king. In a recent study, UK researchers looked at scents and how they boosted or detracted from mental performance. They found that office workers whose cubicles were infused with the scent of rosemary had better long-term memory than those in unscented cubes. “There are other essential oils that can help with memory, but rosemary is by far the best and most economical,” says Cher Core, an aromatherapist in Boston. “Diffuse rosemary essential oil in the air, wear it in a perfume, use it in mists and more. It is a good choice for those studying and folks who need help with memory, focus and concentration.” 8. Pay attention. Duh, right? It may sound obvious, but according to experts, when most people think they’re having memory problems, it’s really because they were distracted or didn’t record the information in their brain properly to begin with, says Linda Edelstein, PhD, adjunct faculty at Northwestern University and the author of The Art of Midlife. “When people cannot retrieve information it is often because they haven't taken it in in the first place,” she says. “You cannot recall information that you did not store.” The number-one trick to paying closer attention? Stop multitasking and be fully present. That means setting down the BlackBerry while lunching with your friend, turning off the TV when you’re trying to read something and not letting your eyes—or mind—wander when chatting with someone at a party. You’ll be more likely to remember the person’s name. 9. Learn a new song. Have you ever found yourself singing along to a song you love that debuted 10 years ago, and yet you still don’t know the lyrics? Learning the words could be fun, but it could also be good for your memory in general. By memorizing a song, “you will be working out at least two different kinds of memory, auditory and verbal, which is probably something you don't do very often,” says Cynthia Green, PhD, an expert on brain health and memory. “The research suggests that constantly challenging our brains with intellectual pursuits may boost our ‘cognitive reserve’ and can have the associated benefit of reducing our dementia risk over the long-term.” 10. Go ahead and doodle. When’s the last time you grabbed a pencil and paper and let your mind go—drawing hearts and rainbows, or whatever scene or object popped into your head? The brake warning light on her 2000 Volkswagen Jetta was on, so when she was getting her oil changed at the dealership, she asked the shop to look into it. She was told she needed a new suspension, brake pads and rotors. Rumsey didn't want to put a lot of money into the car, so she told the shop to skip the suspension. Then she got a call from the dealership's used-car division telling her that the service department mentioned she might be in the market for a car because hers was not drivable. Rumsey called the shop and found out that a broken knuckle (part of the steering assembly) would add $2,000 to the tab, and she couldn't drive the car without the fix. She decided to have the car towed from the dealership and ask a friend to do the repairs. The cost of parts: less than $150. Even I, the car writer at Kiplinger's, have been the target of repair-shop gender politics. Take our advice on taking control -- but keep in mind, anyone can get ripped off. These rules aren't just for ladies. Get a clue. You can diagnose what's wrong before you hit the shop by using the CarMD tool ($99; www.carmd.com). Just plug the hand-held device into your car (every model after 1996 has a standard connection port) and it reads the car's computer codes. You can then plug it into your computer for a full report of what problem the codes indicate, the most likely fix, and what labor and parts for the repair cost in your area. The report also lists recalls for your vehicle and summaries of technical service bulletins (recall notices are also available at www.nhtsa.gov). You can also use the car-care guide at www.carcare.org to learn about typical repairs and questions to ask the mechanic. Show them you know. Familiarize yourself with the owner's manual -- you'll avoid unnecessary maintenance if you know what needs to be done at every service interval. When choosing a repair shop, make sure the technicians are ASE certified by the National Institute for Automotive Service Excellence. Use all your senses to describe a problem, says auto expert Lauren Fix, author of Lauren Fix's Guide to Loving Your Car (St. Martin's Griffin, $17.99). If you say you feel the car pulling to the left, particularly at speeds faster than 40 miles per hour, or you hear a knocking sound only when you turn right, it shows that you've been paying attention and may help the technician diagnose the problem faster. Don't overpay for repairs. If you're getting the car repaired by an independent shop, call the service department at your dealership after you get the diagnosis to see whether it's covered by the warranty, a recall or a technical service bulletin; having the car fixed at an independent shop won't void the warranty, but you may have to pay for the repair. We cut the cord after our local cable provider, Time-Warner, raised our rates to over $90 a month for our cable television service alone. We have one HDTV and were subscribed to the basic cable service, with a digital box. We also subscribed to what they called their "Variety" tier, which included A & E, BBC America, Discovery Channel and the other basic cable channels. We did not get HBO or any premium channels and there were many other basic channels not even included in their Variety tier. In addition, we were charged $10 a month for the rental of the DVR unit and another $10 a month for the ten or so HD channels they offered. The package was originally offered at about $50 a month, but promotional discounts were eliminated or expired and the rate climbed to over $90 for that same service level. After cutting the cord, stopping the service and returning the devices, we needed to initially connect our computer to the TV. We use a PC and bought a converter box called PCtoTV from a company called Kworld as well as a VGA signal splitter. Now we take the VGA signal from the PC into the splitter, with one feed going to our desktop monitor, and the other VGA feed going to the converter. The device converts the signal to S-VIDEO, which we then connect to an input on our TV. Audio comes from the computer speakers, but can also be fed to the TV. Everything looks and sounds great, but we cannot watch in true HD. Newer TVs have web connections built in, allowing direct hook up of your Ethernet or even wireless connection. Many other devices will also connect the Internet to your TV, such as some blu-ray DVD players and video game systems like Nintendo Wii, Sony PS3 and Microsoft XBox. We just received a Logitech Revue with Google TV set top box as a gift from our son. This allows us to watch Netflix streaming video and any other web content on our TV. The device is more open than other set-top boxes, as it allows you to view any website on your HDTV. NOw we don't need to use our computer, we use this wonderful device. To get the local channels, we bought a $15. digital TV antenna, as our TV already has a digital converter built in. This allows us to watch the local Los Angeles channels, in HD. These look even better than cable or satellite, as those companies compress the signal for transmission, the HD over the air is not compressed. This is great for sports games, which look amazing. There are also multiple feeds for the new digital TV channels, for example our NBC affiliate has a the regular NBC feed, a second channel carrying only local content and a third channel with static news, weather and traffic graphics. We watch Hulu.com for many current, network shows, also fox.com and nbc.com stream full episodes. Hulu.com also has a great selection of feature films and documentaries from National Geographic and PBS too. We like pbs.org for their great documentaries and shows like "Antiques Roadshow" and "American Experience". Hulu.com has a Hulu Plus upgraded plan for $7.99 a month, giving access to even more archived shows and the ability to watch shows in HD. Hulu Plus also grants access to mobile and set-top devices, like ours. They offer a one week free trial, so we may check it out. All of these methods rely on a good high speed Internet connection as the backbone. We are lucky that AT & T is offering a promotion in our area in Los Angeles for $19.99 a month for their "pro" level U-Verse DSL service rated at 6 megs download speed, the minimum speed you need to really watch video content. So instead of paying $90 a month to Time-Warner, we are paying $7.99 a month just for Netflix, and all the other programming we watch is free. Scarlett Johansson ![]() One of the most closely guarded trade secrets in the history of commerce may be a secret no more: the radio show "This American Life" thinks it has found the exact recipe for the world's most popular soft drink in a 1979 newspaper article. According to the show's host, Ira Glass, the drink's secret flavoring component, which was created by pharmacist John Pemberton in 1886, is something called "Merchandise 7X." The show's staff recently stumbled across the February 8, 1979 edition of the Atlanta Journal-Constitution, which published an article on page 28 about a leather-bound notebook that once belonged to Pemberton's best friend, another pharmacist in the Atlanta area named R. R. Evans. The notebook contained a number of pharmacological recipes--but the main entry, for students of commercial history, was what's believed to be the exact recipe for the soft drink: all of the ingredients listed with the exact amounts needed to whip up a batch. The Journal-Constitution piece also featured a photo of the page in Evans' notebook detailing Coke recipe--essentially revealing the recipe to the world. But since 1979 well antedated the explosion of digital media, the photograph of the recipe didn't travel far beyond the Atlanta area. Coke's recipe is one of the most closely guarded secrets in American commerce, steeped in cloak-and-dagger lore. After businessman Asa Griggs Candler bought out Pemberton--who also conjured up cough medicines and blood purifiers, among other things--in 1887 for $2,300, the exact recipe for 7X was placed in the vault in an Atlanta bank. It's been reported that only two company employees are privy to its ingredients and how they're mixed at any given time--and that those two aren't allowed to travel together out of fear that a traveling accident might take both of their lives. According to company historian Mark Pendergrast, Candler was so paranoid about the recipe leaking out of his proprietary control that he would go through the company mail himself to prevent any employees from seeing invoices that might tip off its ingredients. "It's this carefully passed-on secret ritual," Pendergrast told Glass, "and the formula is kept in a bank vault at Sun Trust, which used to be the Georgia Trust Company." After Pendergrast reviewed the recipe in the 1979 newspaper photo, he concluded that it could well be the real deal: "I think that it certainly is a version of the formula," he said, adding, "It's very similar to a formula that I found" in one of John Pemberton's notebooks when he was doing research for the book. Coke, for its part, denies that the security of its secret formula has been breached. "Many third parties, including 'This American Life,' have tried to crack our secret formula," company spokeswoman Kerry Tressler said. "Try as they might, they've been unsuccessful." Coke's archive director Philip Mooney told "This American Life" that the recipe may well have been a "precursor" to the prized formula, but probably wasn't the version that "went to market." So what's the secret to making Coke? Well, here's what was written in the notebook: The recipe: Fluid extract of Coca: 3 drams USP Citric acid: 3 oz Caffeine: 1 oz Sugar: 30 (unclear quantity) Water: 2.5 gal Lime juice: 2 pints, 1 quart Vanilla: 1 oz Caramel: 1.5 oz or more for color The secret 7X flavor (use 2 oz of flavor to 5 gals syrup): Alcohol: 8 oz Orange oil: 20 drops Lemon oil: 30 drops Nutmeg oil: 10 drops Coriander: 5 drops Neroli: 10 drops Cinnamon: 10 drops Pemberton had reportedly hit upon the formula for Coke in an attempt to overcome the addiction to morphine he contracted after the Civil War, so it's perhaps not surprising that, in addition to alcohol, the drink originally contained Coca leaves laced with cocaine. After Atlanta passed a local prohibition ordinance in the 1890s, the company took the booze out of the formula, and the company has used cocaine-free coca leaves since 1904. When the beverage debuted in Atlanta-area pharmacies owned by friends of Pemberton, marketers pronounced it "a shot in the arm"-- while Pemberton himself hailed it as a cure for cure pain, impotence and headaches. In our more enlightened age, of course, we know that Coke "adds life"--together with a dollop or two of neroli and nutmeg oil. More than 30 states regulate indoor tanning by minors, with some banning children younger than 14 or requiring parental permission. Illinois and New York are among states considering bills barring anyone under 18 from indoor tanning. The academy's stance is part of a policy statement appearing Monday in the journal Pediatrics. Lead author Dr. Sophie Balk of Children's Hospital at Montefiore (MAHN'-tuh-fee-ohr) in New York says indoor tanning is popular among teenage girls. Some make getting a tan part of their senior prom ritual. About 8,700 people died of melanoma last year and about 68,130 new melanomas were diagnosed. Even after just a few months of use, your PC or Mac may start to lose steam thanks to a fragmented hard drive, too many programs running in the background, or even a rogue piece of malware. This week on Upgrade Your Life, Yahoo! News' Becky Worley serves up some quick and easy tricks for speeding up your PC or Mac, starting with … 1. Clean out your startup items How long do you have to wait after hitting your PC's power button before you can actually get to work? Thirty seconds? A minute? Two minutes? More? If you find yourself routinely twiddling your thumbs while your PC or Mac painstakingly boots itself up, maybe it's because your system is trying to fire up a slew of programs at the same time (and indeed, some programs will set themselves to launch at startup by default). Here's how to ease the frantic rush of competing startup programs: For Windows: Click the Start menu, then select Programs (or All Programs in Windows 7), open the Startup folder, and then—as Becky suggest—delete mercilessly. (Don't worry; you're not deleting the programs themselves.) Note: if you see a program sitting in the Startup folder and you don't know what it's for, search on the Web to see what it does before hitting the "delete" button. For Mac: Open System Preferences under the Apple menu, click the Accounts icon, and then click the Login Items tab. You may find a variety of arcane programs and helper apps lurking inside (such as the mysterious iTunesHelper), but again—search before you zap an unknown program. (Disabling the iTunesHelper app, for example, will prevent iTunes from opening automatically when you connect an iPhone or iPod.) 2. Check for running apps in the Windows task bar Got a Windows-based PC? See that little row of tiny icons in the bottom-right corner of the screen? Over the course of weeks, months, or years, the number of icons sitting in the Windows task bar has probably grown larger and larger—and many of those icons represent programs that are running in the background and consuming your PC's limited resources. Expand the task bar by clicking the little arrow on the side, then right-click each icon in succession. If you find, for example, that programs like Skype and iTunes are whirring away even when you're not using them, right-click and select "Close"—or, better yet, open the program and uncheck any "launch at startup" settings in the Preferences or Options menu. 3. Turn off P2P applications Programs like BitTorrent and Skype work their magic with "peer-to-peer" technology, meaning they leverage the combined computing power and bandwidth of every PC or Mac running their software for such uses as massive file transfers (in the case of BitTorrent) or high-quality, Net-based voice and video chat (for Skype). But while sharing the P2P burden qualifies you a good Netizen, it can also put a significant dent in your system's performance. If you've got programs like BitTorrent and Skype running all day, every day in the background, Becky suggests shutting them down until you really need them. 4. Root out viruses and malware Nothing will slow your system down like a virus, a Trojan horse, or other types of malware. Plenty of commercial antivirus applications are available for Windows PCs, but Becky recommends trying Microsoft's free Security Essentials suite, which will sweep your system for any unwanted, nefarious software and provide ongoing protection via regular updates. Just visit Microsoft's Security Essentials website, download and install the software, and follow the instructions. Anti-virus packages from the likes of Norton and McAfee are also available for Mac users, but there's an ongoing debate about whether virus protection on the Mac is more trouble than it's worth, given that malicious hackers are far more focused on Windows than they are on Mac OS X systems. 5. Clean up your hard drive The more junk you have cluttering up your hard drive, the longer it takes for your system to access the data it needs—and that's a great reason to regularly scan your folders and toss out files and programs you don't need, or move them somewhere else to make more room. One easy (and relatively cheap) solution, says Becky, is to buy an external hard drive for your music, photos, and videos, which can hog a surprisingly large amount of disk space (particularly when it comes to HD-quality TV shows and movies). You can find 500GB external hard drives online for as little as $50, while plenty of 1TB drives (or 1,000 gigabytes) sell for south of $100. Most USB 2.0 external drives are plug-and-play, meaning you just plug them into your PC's USB 2.0 port and you're ready to start dragging and dropping. Another options: online storage sites, such as Dropbox and Carbonite. Becky also recommends dumping any old programs that you no longer use. For Windows, click the Start menu, open the Control Panel, and select Add/Remove Programs (or "Uninstall a program" in Windows 7). Mac users can look in the Applications folder, which you can open in the Mac OS X Finder by clicking the Window menu and clicking Applications. See a program you simply never use anymore? Consider tossing it in the trash—although again, never throw away an application without knowing what it does first. 6. Turn off Mac Dashboard widgets One of the more recent features in Mac OS X is the Dashboard—a layer of handy widgets that you can call up by clicking the Dashboard icon in the Dock. But while Dashboard widgets might be great for a quick check on the weather or to track the Dow, they also eat up a decent chunk of system resources. Do yourself a favor and deactivate the widgets you don't use all that often, Becky advises. Activate the Dashboard, then click the "plus" sign in the bottom-left corner of the screen; next, click the "X" in the upper-left corner of any widgets that you won't miss. 7. Try a new browser—or update your old one Has your browser been slowing to a crawl lately? Maybe it's time for a new one. Both Firefox and Google's Chrome Web browsers are popular—and powerful—alternatives to Internet Explorer, and don't forget that there's a Windows version of Apple's speedy Safari browser. Want to stick with the browser you have? Make sure you're using the latest version. For Internet Explorer, fire up the Windows Update app under the Start Menu. For Firefox, select "Check for update" under the Help menu. Got Chrome? Select "About Google Chrome" under the wrench icon in the Windows version, or under the Chrome menu in Mac OS X. For Safari, launch "Apple Software Update" under the Start menu in Windows, or select Software Update under the Apple menu on the Mac. One more thing: make sure you have the latest version of Adobe's Flash Player installed. Visit Adobe's Flash site to download the latest and greatest version (10.2, as of this writing). 8. Defragment your hard drive Your computer's hard drive is a lot like a closet: the more cluttered it is, the longer it takes to find stuff. One of the easiest (and most effective) ways of tidying up your hard drive is to defragment it, a process that involves consolidating scattered blocks of data into a larger chunk, resulting in bigger swaths of free disk space. Luckily, defragmenting your hard drive in Windows is a snap. Select Computers from the Start menu, right-click on the icon that represents your hard drive, select Properties, click the Tools tab, and click the Defragment Now button. Got a Mac? Thanks to the disk optimization features built into Mac OS X, there's "little benefit" to manually fragmenting your hard drive, Apple says. When I finish a piece of furniture, or a chessboard with the pieces, or some other high end piece of woodwork I get a great sense of accomplishment, knowing that what I created will be appreciated for years to come. These include fluorescent lights, computer screens, environmental allergens, chlorine in swimming pools, air conditioning and heating, reading in dim lighting, and constant rubbing of the eyes. But parting ways may be the healthiest move. Here are nine signs that it's time to fire your doctor. (For simplicity, the references below are to male doctors, but men don't have a monopoly on unacceptable behavior.) 1. You don't mesh. You and your doctor don't need to see eye to eye on everything, but it's helpful if you work well together. If you want a partnership, for example, a doctor who spouts commands is not the best fit. If you value warmth, you may not be able to build an effective relationship with a physician who seems formal or distant. "Some patients like doctors who are very direct and blunt," says Washington, D.C. based family physician Kenny Lin, who blogs for U.S. News. "And some patients can't stand that type of doctor because they think he or she isn't empathetic enough or doesn't provide enough options." When there's a mismatch, neither person is at fault—but it could be grounds for termination. 2. He doesn't respect your time. Do you routinely wait an hour to see your physician only to feel like he's speed-doctoring through the visit? You should never feel like you're being rushed. If your doctor doesn't take the time to answer your questions or address your concerns, there's a problem. The medical community is becoming increasingly sensitive to patients' precious time. When they're late for an appointment, some habitually tardy doctors have even begun compensating patients with money or gifts. If your doctor's chronic lateness makes you grind your teeth, why stay with him? Hint: If you're evaluating a prospective physician, investigate his timeliness beforehand. 3. He keeps you in the dark. A doctor should be open and thorough about why he recommends a certain treatment or orders a specific test, and he should share all results with you. "If a doctor doesn't explain himself, or at least not to your satisfaction, at that point a doctor is bad," Lin says. "I know doctors who have drawn blood or run a bunch of tests without telling patients why they're doing them and what they mean." It's also important that a doctor uses terms you understand, rather than complicated medical jargon; otherwise, explanations are meaningless. Your health is too important to feel confused or uninformed. 4. He doesn't listen. Does your doctor hear you out without interrupting? "It all comes down to communication and whether you feel like you're asking questions and they're not being answered," says Carolyn Clancy, director of the Agency for Healthcare Research and Quality. She recalls visiting a doctor for a second opinion on whether she should go through with a procedure recommended by her dentist. "He made a big leap—that I didn't want to have it done because I was afraid of the pain—and kept reassuring me that it was virtually pain-free. That's not what I was asking. After three rounds, I concluded that we weren't going to get to a productive place, and I didn't go back." 5. The office staff is unprofessional. The receptionists are the link between you and the doctor. If they blow you off—or neglect to give your message to the physician, say about side effects of a new medication—your health could be at risk. Even if you like your doctor, a bad office staff could signal it's time to look elsewhere. 6. You don't feel comfortable with him, or wonder about his competence. Doctors need to know intimate details you may not even share with friends or family members. If you're unable to disclose such facts, you and your doctor may not be the right match. A sense of unease about his decisions and recommendations, even if you can't say exactly why, is also a perfectly legitimate reason for cutting the cord, says Don Powell, president of the American Institute for Preventive Medicine, a nonprofit that promotes healthy behavior through wellness programs and publications. Beware of sloppy medical mistakes, too: If your doctor prescribes a medication to which you're allergic, and you know that information is in your history, a separation may be in order. 7. He doesn't coordinate with other doctors. Your primary care physician should be the quarterback of your healthcare team, managing each step of the medical process. That means keeping track of specialists' reports and instructions and talking with you about their recommendations. If he's slacking, an important piece of your care could slip through the cracks. 8. He's unreachable. A good doctor is available for follow-up questions and concerns. Patient advocate Trisha Torrey, author of You Bet Your Life! The 10 Mistakes Every Patient Makes, recalls the time her husband developed severe tooth pain on a weekend. His dentist's voicemail included a cell phone number and a promise of a quick response, but he never heard back. An emergency clinic visit and root canal later, he told his dentist she was fired. A growing number of doctors are making themselves available to patients via E-mail, text message, and Skype, and at the very least, you need to know that in an emergency, you won't be left hanging. 9. He's rude or condescending. Time to part ways. Same goes if he trivializes your concerns as though they're not valid. One of the clearest signs you should move on is if he walks out of the room while you're still talking, says Clancy. That's what happened when her sister met with a surgeon to determine if her daughter should go through with a procedure. "When my sister finished asking her question, the doctor was gone," Clancy recalls. "She called me afterward and I told her, 'You have to find someone else. To keep brights their brightest and blacks from fading, turn garments inside out and choose the coolest temperature setting that will get them clean. 4. For stubborn food stains, such as coffee, soy sauce, or mustard, blot the troubled area with foam shaving cream and allow it to sit for half an hour. Repeat the process and if the stain remains, try leaving the cream in overnight. 5. If you’ve just washed a stained garment, examine the results before tossing it in the dryer. If the stain didn’t come out, the dryer’s heat will set it and make it even harder to deal with. Your chances of success are greater if you remove the item while it’s damp. 6. Your best chance of salvaging a stained garment after it’s been in the dryer is to soak it for thirty minutes in a solution that’s equal parts water and hydrogen peroxide. Be sure to wash it immediately afterward. 7. Adding a quarter cup of baking soda to a wash will take care of stale, musty odors common during the summer months and give your machine a fragrant boost to boot. 8. When conquering dried bloodstains, dampen the damaged garment with hydrogen peroxide, then rinse with cold water. If possible, set your washing machine’s temperature for cold as well. 9. When battling mildew and soap scum-stained shower curtains, don’t hesitate to drop them in the washing machine. For cloth as well as heavier vinyl and plastic curtains, use ordinary laundry soap and the recommended amount of bleach per load. 10. Whether you’re washing by machine or hand, vinegar is a must-have in any laundry room. And fear of stroke -- when a blood vessel in or leading to the brain bursts or is blocked by a blood clot, starving brain cells of oxygen and nutrients -- is well founded. After all, stroke is the number-three killer in the U.S., affecting more than 700,000 people each year. Here are five foods that cause the damage that leads to stroke. 1. Crackers, chips, and store-bought pastries and baked goods Muffins, doughnuts, chips, crackers, and many other baked goods are high in trans fats, which are hydrogenated oils popular with commercial bakeries because they stay solid at room temperature, so the products don't require refrigeration. Also listed on labels as "partially hydrogenated" or hydrogenated oils, trans fats are found in all kinds of snack foods, frozen foods, and baked goods, including salad dressings, microwave popcorn, stuffing mixes, frozen tater tots and French fries, cake mixes, and whipped toppings. They're also what makes margarine stay in a solid cube. The worst offenders are fried fast foods such as onion rings, French fries, and fried chicken. Why it's bad For years scientists have known trans fats are dangerous artery-blockers, upping the concentrations of lipids and bad cholesterol in the blood and lowering good cholesterol. Now we can add stroke to the list of dangers. This year researchers at the University of North Carolina found that women who ate 7 grams of trans fat each day -- about the amount in two doughnuts or half a serving of French fries -- had 30 percent more strokes (the ischemic type, caused by blocked blood flow to the brain) than women who ate just 1 gram a day. Another recent study, also in women, found that trans fats promoted inflammation and higher levels of C-reactive protein, which have been linked to an increased risk of diabetes, heart disease, and stroke. What to do Aim to limit trans fats to no more than 1 or 2 grams a day -- and preferably none. Avoid fast-food French fries and other fried menu items and study packaged food labels closely. Even better, bake your own cookies, cakes, and other snacks. When you can't, search out "health-food" alternative snacks, such as Terra brand potato chips and traditional whole grain crackers such as those made by Finn, Wasa, AkMak, Ryvita, and Lavasch. 2. Smoked and processed meats Whether your weakness is pastrami, sausage, hot dogs, bacon, or a smoked turkey sandwich, the word from the experts is: Watch out. Why it's bad Smoked and processed meats are nasty contributors to stroke risk in two ways: The preserving processes leave them packed with sodium, but even worse are the preservatives used to keep processed meats from going bad. Sodium nitrate and nitrite have been shown by researchers to directly damage blood vessels, causing arteries to harden and narrow. And of course damaged, overly narrow blood vessels are exactly what you don't want if you fear stroke. Many studies have linked processed meats to coronary artery disease (CAD); one meta-analysis in the journal Circulation calculated a 42-percent increase in coronary heart disease for those who eat one serving of processed meat a day. Stroke is not the only concern for salami fans; cancer journals have reported numerous studies in the past few years showing that consumption of cured and smoked meats is linked with increased risk of diabetes and higher incidences of numerous types of cancer, including leukemia. What to do If a smoked turkey or ham sandwich is your lunch of choice, try to vary your diet, switching to tuna, peanut butter, or other choices several days a week. Or cook turkey and chicken yourself and slice it thin for sandwiches. How to Tell if Someone Is Having a Stroke 3. Diet soda Although replacing sugary drinks with diet soda seems like a smart solution for keeping weight down -- a heart-healthy goal -- it turns out diet soda is likely a major bad guy when it comes to stroke. Why it's bad People who drink a diet soda a day may up their stroke risk by 48 percent. A Columbia University study presented at the American Stroke Association's 2011 International Stroke Conference followed 2,500 people ages 40 and older and found that daily diet soda drinkers had 60 percent more strokes, heart attacks, and coronary artery disease than those who didn't drink diet soda. Researchers don't know exactly how diet soda ups stroke risk -- and are following up with further studies -- but nutritionists are cautioning anyone concerned about stroke to cut out diet soda pop. What to do Substitute more water for soda in your daily diet. It's the healthiest thirst-quencher by far, researchers say. If you don't like water, try lemonade, iced tea, or juice. 4. Red meat This winter, when the respected journal Stroke published a study showing that women who consumed a large portion of red meat each day had a 42-percent higher incidence of stroke, it got nutrition experts talking. The information that red meat, with its high saturated fat content, isn't healthy for those looking to prevent heart disease and stroke wasn't exactly news. But the percentage increase (almost 50 percent!) was both startling and solid; the researchers arrived at their finding after following 35,000 Swedish women for ten years. Why it's bad Researchers have long known that the saturated fat in red meat raises the risk of stroke and heart disease by gradually clogging arteries with a buildup of protein plaques. Now it turns out that hemoglobin, the ingredient that gives red meat its high iron content, may pose a specific danger when it comes to stroke. Researchers are investigating whether blood becomes thicker and more viscous as a result of the consumption of so-called heme iron, specifically upping the chance of strokes. What to do Aim to substitute more poultry -- particularly white meat -- and fish, which are low in heme iron, for red meat. Also, choose the heart-healthiest sources of protein whenever you can, especially beans, legumes, nuts, tofu, and nonfat dairy. 5. Canned soup and prepared foods Whether it's canned soup, canned spaghetti, or healthy-sounding frozen dinners, prepared foods and mixes rely on sodium to increase flavor and make processed foods taste fresher. Canned soup is cited by nutritionists as the worst offender; one can of canned chicken noodle soup contains more than 1,100 mg of sodium, while many other varieties, from clam chowder to simple tomato, have between 450 and 800 mg per serving. Compare that to the American Heart and Stroke Association's recommendation of less than1,500 mg of sodium daily and you'll see the problem. In fact, a nutritionist-led campaign, the National Salt Reduction Initiative, calls on food companies to reduce the salt content in canned soup and other products by 20 percent in the next two years. Why it's bad Salt, or sodium as it's called on food labels, directly affects stroke risk. In one recent study, people who consumed more than 4,000 mg of sodium daily had more than double the risk of stroke compared to those who ate 2,000 mg or less. Yet the Centers for Disease Control estimate that most Americans eat close to 3,500 mg of sodium per day. Studies show that sodium raises blood pressure, the primary causative factor for stroke. And be warned: Sodium wears many tricky disguises, which allow it to hide in all sorts of foods that we don't necessarily think of as salty. Some common, safe-sounding ingredients that really mean salt: •Baking soda •Baking powder •MSG (monosodium glutamate) •Disodium phosphate •Sodium alginate What to do Make your own homemade soups and entrees, then freeze individual serving-sized portions. There’s no RDA for omega-3s; Kirkpatrick suggests aiming for 600 mg daily. Omega-3 fatty acids “As we get older, our oil glands produce less oil, so you see more flaking and scaling,” says dermatologist Valori Treloar, M.D., coauthor of The Clear Skin Diet. Omega-3s may help lubricate skin to keep it looking dewy. Try to consume 600 mg a day. There’s no RDA, but doctors consider 30 micrograms adequate. GOOD SOURCES Eggs (up to 25 mcg each), avocado (up to 6 mcg each), salmon (up to 5 mcg per 3 oz) The problem: Signs of aging Getting older is fine (wisdom, respect, all that good stuff). Looking older, not so much. Thankfully, we can help stall the process by eating strawberries, pineapple and other delish foods. Vitamin A Of skin’s several layers, the dermis—which lies right below the surface layer of skin (or epidermis)—contains all the collagen, a protein that gives skin plumpness and elasticity. “Vitamin A helps increase collagen production and thickens the dermis,” Dr. Levine explains. The result: Skin looks fuller and bounces back more readily. And because it’s an antioxidant, A also helps repair the free radical damage to skin cells that leads to wrinkling and sagging. The DV is 5,000 IUs. For starters, polyphenols in green tea significantly increased circulation to skin in a recent study at the University of Witten-Herdeck in Germany. “We don’t know the mechanism, but if you’re getting more blood flow to the skin, the cells are getting increased nutrients, which can help support their health,” says study author Carolyn Moore, Ph.D. Participants drank the equivalent of 8 cups of decaffeinated green tea a day; Dr. Moore can’t speculate on the effect of drinking less, but it couldn’t hurt to start with 1 or 2 cups a day. People who drank water mixed with cocoa powder high in flavonols, another type of polyphenol, experienced a similar increase in hydration and blood flow to their skin, as well as less roughness and scaling, a study in The Journal of Nutrition shows. What’s more, cocoa’s flavonols seem to offer some UV ray protection: The skin of cocoa sippers showed less redness after sun exposure. But this dependable cookware is a must in the modern kitchen. Cast-iron skillets conduct heat beautifully, go from stovetop to oven with no problem and last for decades. (In fact, my most highly prized piece of cookware is a canary-yellow, enamel-coated cast-iron paella pan from the 1960s that I scored at a stoop sale for $5.) As a registered dietitian and associate nutrition editor of EatingWell Magazine, I also know that there are some great health reasons to cook with cast iron. 17 Healthy Recipes for Cast Iron Skillets 1. You can cook with less oil when you use a cast-iron pan. That lovely sheen on cast-iron cookware is the sign of a well-seasoned pan, which renders it virtually nonstick. The health bonus, of course, is that you won’t need to use gads of oil to brown crispy potatoes or sear chicken when cooking in cast-iron. To season your cast-iron skillet, cover the bottom of the pan with a thick layer of kosher salt and a half inch of cooking oil, then heat until the oil starts to smoke. Carefully pour the salt and oil into a bowl, then use a ball of paper towels to rub the inside of the pan until it is smooth. To clean cast iron, never use soap. Cast iron is a chemical-free alternative to nonstick pans. Another benefit to using cast-iron pans in place of nonstick pans is that you avoid the harmful chemicals that are found in nonstick pans. The repellent coating that keeps food from sticking to nonstick pots and pans contains PFCs (perfluorocarbons), a chemical that’s linked to liver damage, cancer, developmental problems and, according to one 2011 study in the Journal of Clinical Endocrinology & Metabolism, early menopause. PFCs get released—and inhaled—from nonstick pans in the form of fumes when pans are heated on high heat. Likewise, we can ingest them when the surface of the pan gets scratched. Both regular and ceramic-coated cast-iron pans are great alternatives to nonstick pans for this reason. While it’s true most edibles freeze under the right conditions, there are some that should never see the inside of your freezer. Delicate vegetables like lettuce practically disintegrate when they’re frozen then thawed. Creamy sauces that are frozen separate and “break” or curdle when thawed. Even coffee shouldn’t be stored in the freezer—especially dark roasts. The oils that make them so special break down in freezing temperatures, allowing the coffee to readily absorb off- flavors. The USDA also advises not to freeze canned goods or eggs in their shell. (But you can freeze canned goods if they are removed from their original packaging, as well as eggs as long as they are removed from their shell.) Don’t Miss: 6 More Myths About Storing and Making Coffee Myth: You can freeze food indefinitely. This is true at least from a food-safety standpoint, but quality suffers the longer food is frozen. Here are some guidelines from the USDA as to how long to keep food in your freezer (at 0 degrees F) for optimal freshness: •Soups, stews and casseroles: 2-3 months •Cooked meat 2-3 months •Uncooked steaks, roasts or chops: 4-12 months •Cooked poultry: 4 months •Uncooked poultry: 9-12 months Of course how you store the item will lengthen or shorten its freezer life. Air coupled with moisture is the enemy of frozen food (think freezer burn), so if you can keep those two elements out you’ll give your frozen foods a longer life. That’s why I love the vacuum sealer. It sucks air out of the packaging so foods last longer than if they’re just stored in plastic bags or their original packaging. Myth: Freezing kills bacteria. Freezing foods renders bacteria inactive but doesn’t actually kill anything. That means if your food went into the freezer contaminated, once thawed it will still harbor the same harmful bacteria. Cooking it to the recommended temperature is the only way to ensure that your food is safe. Don’t Miss: 10 Kitchen Rules You Should Follow Myth: Frozen food has fewer nutrients than fresh. Actually, the opposite can be true. Frozen fruits and vegetables may be even more healthful than some of the fresh produce sold in supermarkets because they tend to be processed at their peak ripeness, a time when, as a general rule, they are most nutrient-packed. If you’re worried about nutrient loss, eat your frozen fruits and veggies soon after purchase: over many months, nutrients in frozen vegetables do inevitably degrade. Finally, steam or microwave rather than boil your produce to minimize the loss of water-soluble vitamins. You can freeze and refreeze to your heart’s content as long as the food has not been left outside the fridge for more than 2 hours (or 1 hour in 90-degree heat). One point to be aware of is that refreezing anything uncooked, especially meat, will degrade the quality due to the loss of moisture in the thawing process. So although it is technically safe to eat, from a culinary standpoint, it’s best to avoid refreezing if at all possible. Myth: You can store frozen food long-term anywhere in your freezer or anywhere that’s cold. The door of the freezer is a handy place to store frozen items, but not necessarily the best place for long-term storage. The temperature near and on the door fluctuates every time the door is opened. Although the food may remain frozen, the freezing process could be slowed, opening up the possibility for larger ice crystals to form inside the food and destroy its integrity. To prevent this, store frozen foods toward the back of the freezer where a constant 0 degrees F is more likely to be achieved and use goods stored near the front or on the door sooner. And if the power goes out? Don’t open the freezer door! According to the USDA, a full freezer should remain frozen for 2 days. And if you’re tempted to store your freezer overflow in a snowbank—don’t. Even if the temperature is very cold, the sun can still heat up your frozen foods to dangerously warm temperatures. Police say one of the men admitted that he believed with his competitor out of the way, more pizza lovers would flock to his restaurant. The Papa John's was gutted in the Oct. 20 fire. Both men — Sean Everett Davidson, 23, and Bryan David Sullivan, 22 — were booked on an arson charge and were being held in jail. Millions of Americans have incurred excessive debt over the past few years, and this trend spikes early in the year. And, when it comes to credit card debt, there is some good news and some bad news. This allows all the money you make in payments each month to be applied directly into paying down your balance, shrinking the amount you owe much faster. This can greatly benefit your credit score and credit-to-debt ratio, both of which can make you much more attractive to lenders. Perfect fried chicken--golden brown, with a flaky-crisp crust and juicy meat--is easily accomplished at home. Here's how to achieve irresistible goodness every time, from the ultimate spice rub to a delicate dredge. (And yes, the pan you use matters, too.) Hunter Lewis, Bon Appetit We could go on for days singing chicken-fried hallelujahs to comfort food's holy grail, but sentimentality won't get you a crunchy, superbly seasoned bird. Our guide to the right ingredients, technique, and tools will. So put on your apron, grab a cast-iron skillet and a cold one (lemonade, sweet tea, beer-your call), and let's start frying. 1. The Bird: Think Smaller Fried chicken was traditionally a spring dish in the South, and the young chickens used were dainty compared with today's hefty birds. To approximate those pared-down poultry, cut a three- to four-pounder into ten pieces, or use the equivalent weight in thighs, drumsticks, and breasts. (If you fry anything larger than four pounds, the crust will burn before the meat has cooked through.) Promote even cooking by halving the breasts, then cutting them crosswise. Antibiotic- and hormone-free or organic chickens are worth the expense. It's not like frying is an everyday affair, so start with a good bird. 2. The Rub: Keep It Kosher When it comes to seasoning your bird, Linton Hopkins, chef at Atlanta's Restaurant Eugene, says to break with tradition and forget about the buttermilk brine: "The danger of brining in buttermilk is that you never get the skin crisp enough." Embrace the overnight dry rub instead. Kosher salt is the key: It keeps the meat juicy and carries the flavors of the spices to the bone. Now that the interior of your bird is seasoned, it's time to address the surface. A good wash and dredge--that marriage of wet and dry ingredients--should complement, not bury, the skin. The loose buttermilk-egg wash imparts rich color and encourages the flour mixture to cling. A single dip accentuates the skin's texture as the fat renders and the skin becomes crackling. This thin shell will fry up as a delicate layer: No fried chicken should suffer the indignity of a bulky overcoat with padded shoulders. 1) Let the seasoned chicken come to room temperature. It won't cool the oil as much when it hits the skillet, and it will cook more evenly. Meanwhile, set up your dredging station from left to right. 2) A quick dip into buttermilk and egg sets up the chicken for a golden, craggy crust. Designate one hand as your wet-dip hand so you don't turn yourself into a papier-mâché project. 3) Using your dry hand, roll the chicken pieces in a blend of flour and cornstarch (the latter helps the flour adhere and promotes a good crust), then knock off any excess by tapping the chicken against the edge of the dish. "You want a rumor of flour," says Scott Peacock, former chef of Decatur, Georgia's Watershed restaurant and co-author with the late Edna Lewis of The Gift of Southern Cooking. 4) Gently lower the pieces into 350° oil. 4. The Fat: Solve the Peanut Riddle Vegetable oil and shortening work just fine, but we love peanut oil, and we're not alone. Dense, with a slightly earthy flavor and a high smoke point, peanut oil is "the lard of oils," says Scott Peacock. Frying in peanut oil produces a lovely, mahogany-brown crust. Careful frying in shallow oil will render the fat from the skin, resulting in a coveted crust. But an excess of oil that remains while the chicken cools can translate to a greasy finish. The solution? Use tongs to lift each piece out of the oil and hold it at an angle for a good three seconds while the fat drips back into the pan. Transfer it to a rack set inside a rimmed baking sheet so air can circulate and keep it from getting soggy. Let cool for at least 10 minutes before digging in. Finally, if you don't have a deep-fry thermometer, don't worry. The oil will shimmer slightly when it's hot enough, and a piece of bread should bubble on contact and brown quickly. 5. The Skillet: Cast a Little Black Magic A cast-iron skillet--inexpensive and basically indestructible--is the prized frying vessel for a reason. It retains heat better than most pans, which helps regulate the oil temperature and ensures even frying. If you don't own one already, this recipe should provide ample motivation. 6. The Finish: Give 'Em More to Love This chicken doesn't need any embellishments, but these sure won't hurt. Rosemary Honey Tie 3 rosemary sprigs together with kitchen twine and use as a brush to slather this fragrant honey over everything from biscuits to chicken. Bring 1/2 cup honey, 1 Tbsp. unsalted butter, 1 rosemary sprig, and a pinch each of salt and pepper to a simmer in a small saucepan over medium-low heat. Remove from heat and let steep for 30 minutes before serving. Dip the rosemary brush into the honey and use to drizzle over the chicken. Sichuan-Spiced Dipping Salt A little of this Chinese-style spiced salt goes a long way. Serve it in small bowls for dipping, or sprinkle it over fried chicken. Combine 2 Tbsp. each of Sichuan peppercorns, cumin seeds, and kosher salt in a small skillet over medium heat. Heat, stirring often, until spices are toasted and very fragrant, about 3 minutes. Transfer to a bowl; let cool. Finely grind mixture in a spice mill or in a mortar with a pestle. Related: Bon Appetit's Favorite Chili Recipes Pepper Vinegar Southern cooks use their chile-infused vinegar to add a tart, floral kick to dishes like chicken or greens. You can also use it to wake up salad dressings. Customize it by adding bourbon or fruit liqueur and using your favorite chiles. Combine 2 cups distilled white vinegar, 2 dried chiles de árbol, and 2 Scotch bonnet chiles (or any of your favorite dried or fresh chiles), quartered lengthwise, in a 1-pint jar. Seal and shake. Let sit at room temperature for 1 week before using. A Couple Extras: Your No-Fuss Fried Chicken Toolbox Bowl: Choose one large enough to hold all the chicken pieces and that has room for tossing with the spice rub. An airtight container works, too. Tongs: Long-handled tongs give you the reach you need to turn the chicken pieces as they cook. Frequent flipping encourages even browning. Skillet: A 10"-12" cast-iron pan is just right for this recipe. If cooking more than one bird, use the same pan and work in several batches. Thermometer: Take the guesswork out of frying with a deep-fry thermometer. The chicken will cool the oil; adjust the flame as needed. Rack & Pan: Wire cooling racks aren't just for cookies. The rack allows air to move around the pieces as they cool. The sheet pan catches any drips. Leftover Chicken? It May Be Even Better Than the Real Thing Cold fried chicken is more than a slice of pizza you found in the fridge: It's a dish unto itself. Growing up, all of the chicken I ate at Southern picnics, tailgates, and church potlucks taught me how to read a drumstick.
